Vinification: This wine is made from a special selection of grapes from Corvina Veronese, Corvinone, Rondinella and Molinara, harvested between the end of September and the beginning of October. The grapes are left to rest until the beginning of November and are then prepared according to the `Ripasso` technique which is to re-ferment the vintage Valpolicella Superiore on Amarone lees to increase its color, character and flavor.
